  • 75g water ( (115°-120°) (approximately 1/3 c.).
  • 3g (1/3g) yeast (1/16th of a tsp., but you can use 1/8 t.)

  • 2 g yeast (approximately 1/2 t. minus a pinch)
  • 2.5g salt (approximately 1/2 t.)
  • Cornmeal
  • 1 c. cold water




  • 130 g water (110°-115°) (3/4c)
  • 4.5 g yeast (1t.)
  • 4.5 g salt (1t.)
  • 255 g bread flour or all-purchase (1 1/2c + 1T)
  • 1T sugar (optional)
  • Cornmeal
  • Flour (for kneading)
  • 1 cup cold water
