- 2 g yeast (approximately 1/2 t. minus a pinch)
- 2.5g salt (approximately 1/2 t.)
- Cornmeal
- 1 c. cold water
- 130 g water (110°-115°) (3/4c)
- 4.5 g yeast (1t.)
- 4.5 g salt (1t.)
- 255 g bread flour or all-purchase (1 1/2c + 1T)
- 1T sugar (optional)
- Cornmeal
- Flour (for kneading)
- 1 cup cold water
